Yeast are a unicellular fungi commonly used to leaven bread products and ferment alcoholic beverages. Beer brewers typically use either one of the varieties of ale yeast, Saccharomyeces cervisiae, or the lager strain, Saccharomyeces uvarum. Brewers of wheat beers often use varieties of Saccharomyeces delbrueckii.
