Dhokla aka Khaman, are Surat's very own fast food.Cheap and filling, they are best eaten hot on a rainy day. The Dhokla consists of chana dal (Peas) soaked over nite just like dosa's rice. The second process after the above, remove excess water and grind it, add chilli paste, ginger paste , soda bicarb... Leave the paste for 4-5 hours to ferment. spread it in a flat dish like utensil. Steam boil it for 10- minutes, later cut it in cake like pieces, best served with green chutni and chopped onions. To make it more tasty, add musturd seed's tadka.
