Meat grinder

A meat grinder or meat mincer is a culinary tool for grinding, fine mince or mix raw or cooked meat, fish, vegetables or similar food. It replaces tools like the mincing knife for example which has been used to produce minced meat, sausage meat, charge etc. The producer puts the chunky minced food into a filling opening, which is placed on the top of the grinder. From there the material goes on a horizontal spiral conveyor. This spiral conveyor, that can be powered by a hand wheel or an electric engine, squashes and mixes the food partially. At the end of the spiral conveyor there is a knife installed directly in front of the fixed perforated disk. At this opening the minced meat leaves the machine. The fine grit of the meat depends on the size of the holes of the disk.
By changing the perforated disk it can also produce breadcrumbs or the charge for sausages. After the drop from the retainer, it is possible to change the perforated disk. To deconstruct the grinder for cleaning, it is necessary to drop off the fixing screw. Beside this hand wheel or engine powered grinders, there exists some tools for the butcher (Table- or shop-grinders for example) and for the food industry. This large machines can produce many tons per hour. They are observerd by the Typ-C-Norm DIN EN 12331 “Foodmaschines – Grinders – safety- and hygienerequirements” from 2004-5, with the change from 2007-A2.
Mixer unit
A basic optional feature for huge grinders is the mixer unit. With this unit the producer can mix different kinds of meat(for example beef or pork) with each other homogeneously and/or mix the meat with additives, like salt or spices, before grinding it. Without such a mixer unit the producer have to mix the additives into the meat after grinding it. This bears on the quality of the products in the form of the sensory and visual quality in the majority of cases.
Frozen meat grinder
Frozen meat grinders can process frozen blocks of meat, bacon and MDM up to –25 °C. The frozen blocks can amount from 900x500x150 mm to 900x500x200 mm, the power can applies from 8.000 kg to 12.000 kg. By the regular cutting the chopped meat can be processed through mixers and grinders, which reach an optimal addition in the cutter as well as a protection of the cutter and knifes.
There are 2 different drive forms, a single rev-drive, which is ideal to grind frozen meat blocks, and a two rev-drive, which promises higher power by the application of a special meat worm.
The first cut takes place in the worm, who peels with his long pulled, sharpen meander/bend approximately 8 cm from the frozen meat and then to pass on for the next cut in the cutting set . The lock protection prevents possible mechanical damages in too high burden/load, for example by a foreign body.
