Cassoulet

Cassoulet is a rich stew or casserole originating in the south of France, containing meat (typically pork), sausages and beans. Numerous regional variations exist, the most notable being from Toulouse, which is cooked using spicy Toulouse sausage.

Cassoulet is strongly associated with the town of Castelnaudary which is often attributed as the "Capital of Cassoulet", and is the location of France's largest manufacturer of tinned cassoulet Spanghero.

Named after cassole the distinctive tapered, covered pot ideally used in the dish's construction.
