Deep house is a style of house music. It is at a slower tempo then most house music, and focuses on jazz music samples (often put through a cut-off filter). The structure of deep house is also often more simple then other sub genres of house or trance, with less build ups and simpler drum machine programming. In fact, many elements of the song structured are controlled by the DJ himself, via using a low-pass filter to cut out the bass drum for a few measures, and restoring it for effect.
