An Enchilada is a traditional Mexican dish.

It is made with a fried tortilla filled with chicken, cheese or meat. Once in the plate, it can be covered with tomato, green tomato sauce or mole

Optionally, it can be covered with sour cream, grated cheese and/or finely chopped onion.
