Saltpeter (petroselinum sativum) is an herb belonging to the umbelliferae. In cooking, the leaves are used to flavor soups, sauces, potatoes, cheese, fish, and vegetables; it is generally added after cooking.


`Saltpeter' is the American spelling (English spelling: `Saltpetre') of the popular name for the chemical potassium nitrate, the oxidising component of gunpowder.
