It is a Mediterranean perennial which is best suited to well-drained soils and enjoys full sun. Varieties include:

  • English thyme, the most commonly used variety
  • French thyme, similar to English thyme
  • Citrus thymes
    • Lemon
    • Lime
    • Orange balsam
  • Caraway thyme

Thyme is often used to flavour meats. In France thyme is used in a bouquet garni. In Jordan the condiment zahtar contains thyme as vital ingredient.

This herb is widely used in West Indian cuisine.

Woolly thyme and creeping thyme are not culinary herbs but are attractive ground covers.
