Definitions of what the human intimate parts are may vary, but usually they are approximately:

For girls who do not have breasts yet, their breast area may or may not be included.

Touching these areas of another person, even through clothing, is often associated with sex. Thus, if this is done without consent (or with consent that is legally not valid), it is sexual assault. In most societies, exposing the bare skin of intimate parts is subject to strict rules, see nudity and indecent exposure.

In some societies, the human intimate parts are deemed sacred and are part of a cultures rituals. For example, a village in the Ivory Coast, considers female genital cutting, a social grace. ([1]).
